Neptune Papers Issue Nine — Cover: La Cavalerie by David William Baum

La Cavalerie is the Provençal estate of the late couturier Emanuel Ungaro — a 65-hectare property in the foothills of the Luberon mountains with roots stretching back to 1176, when it served as a commanderie for the Knights Templar. Ungaro came upon it in 1986 while searching for a retreat between Aix-en-Provence and Tuscany, and spent years restoring its stonework and gardens with local craftspeople. The estate is now in the care of his daughter Cosima Ungaro and her husband Austin Feilders, who have transformed it into a hospitality project and artisanal olive oil producer.
